I haven’t had chicken cacciatore (yes you said it right) in years. The only difference between your recipe and mine is I add Balsamic vinegar. (to taste) it adds depth to dish and helps chicken cook more evenly. Very delicious! I serve over rice.
Nessa, I have a question please.
I’m binge watching your channel every chance I can to get caught up on videos. I’ve not yet come across one comparing Instant Pot duo to the new Rio. It seems the Rio is offering more interior cooking space. Am I right? I see no accessories but ways around that.
I was brought up using ingredients on hand. Now, if I try a recipe for the first time, I will follow the best I can, then tweak it to my family’s preference. But 9.5 times out of 10, I use what’s on hand.
I can’t eat Italian seasoning anymore either. I’ve acquired an allergy to Oregano, go figure.
Could you send a link for the lid you use? I ordered a Rio but returned it because I only had the 6 qt lid.

Looks delicious, Nessa. I grew up within an Italian group of friends. Their mothers taught me authentic Italian dishes. It's translated to hunter stew. I was taught to spice it up with chili flakes and garlic. Haven't made it in a long time. Make it in cast iron Dutch oven start by browning on the stove. Skin on and bone in. Add onions red, orange, yellow peppers, mushrooms. Sauté until soft add tomatoes add chicken back in. Add stock or water to almost covering chicken. Throw in black olives. Bake at 375 until chicken is cooked 165 internal temp. Serve over pasta rice mashed potatoes. Or just with a crusty roll. ❤❤

I have never cared for chicken cacciatore, but the ones that I had didn’t have all of those extra goodies in it. I’m pretty sure I would like the one that you just made.

I do make chicken cacciatore! I add veggies so I can take them out and eat the veggies! I have a stock of tomato paste, sauce and seasonings as my Mom was Italian. I use the minced garlic as well. I cook it on the stove top at first, then into the oven to thicken and get done. I add grated parm to the sauce as well. They seem to like it! 😂❤

I haven't made chicken cacciatori in a long time. Yes I use what I have on hand. I'm not going to waste time and gas to get a missing ingredients. I can almost smell your dinner. I really like those noodles. Blessings friend ❤
Mmmmmmmm, That looked really delicious. I with you on doing the substitutions, I do that all the time and use what I have on hand. A suggestion for you on the tomato paste, what I do when I use just a couple of spoonfuls is to take the rest of it and spread it out in a couple of sandwich bags and freeze it. Then when I just need a small amount I can just break off a couple of pieces from the bag and use them that way I'm not wasting a whole can of tomato paste. Take care and stay safe.
Good afternoon, I am so glad you enjoyed it. I do not go out and buy things specifically for a dinner unless i am having company. I usually do not have italian seasoning on hand so just use oregano, thyme maybe dried basil if i have it. Like you, I use what i have on hand and as you mentioned the tomato paste, who uses the whole can unless you are cooking a really big meal. If anyone would like to know, you can make marinara sauce with the tomato paste and a few other ingredients. Just like you Nessa, i like to season my chicken with more spices other than salt and pepper. If i have leftover black olives from making nachos i throw them in there too! I am not a wasteful person either. I try to use everything or it goes in the freezer. Thank you for sharing have a lovely evening!
