    You can't tell me that somebody in this family didn't pass for white a long time ago. Cooking like this is passed down from generation to generation. Despite that incident she had a few years ago. I always felt like she was a part of the family. Paula, I want to see you go on that show, "Finding Your Roots". lol

    Hello Paula: Have not texted you in a while. Watching your video making fresh collard greens with both your boys which is priceless. I remember watching you decade(s) ago when the boys were both so young now we are so blessed to be older & still doing the same things that make us happy.     I have to turn in my "southern boy" card with this one. I have NEVER been able to eat collards, I just have never liked them. But always get teased by it…people asking me if I am sure I was raised here in North Carolina? LOL

    Hey Miss Paula. I'm a Tennessee girl transplanted to Georgia for the past 30 years. We had mostly mustard and turnip greens when I was growing up. I love the convenience of the bagged greens but I still rinse my greens after picking out the stems. I don't want anything to mess up my pot liquor.

    I do basically the same as you do. But when I clean them, I use water as hot as my hands can stand, 1st wash is with a good bit of salt. I run the collards around in this for a minute then drain. 2nd wash is with clear water, again as hot as my hands can stand. From there, I roll up and cut into strips. Mr. Fudge, this white boy has used neck bones, ham bones, jowls, and even cheeks a few times, always smoked.

    My Dad loved collard greens and I remember my Mom fixing them on the stove using bacon grease. I would love to have more recipes for my pressure cooker. I only use mine about once a year! My bad! Lol
