Hubby and I are going to have this Sunday since he works on St. Patty’s Day until 12:30 in the morning. We love corned beef brisket. I’m going to ours in the crock pot for 8 hours on low. Yours looked delicious Rick! ❤

I just got another pressure cooker after not having one for a few months, made my first corned beef the other day since about 3 months. MAN the intensity from the freshly pressure cooked beef is like nothing else, reheating is good, but nothing like fresh out the pot

Yes, yes, yes! Looks delicious! Pressure cooker makes it very tender and tasty! I always just had cabbage with it, but carrots and potatoes sound delicious! Thumbs up! Thanks for sharing! We are having firehouse large hook and ladder subs, double meat, no mayonnaise, extra onions, with a pickle on the side. And firehouse brownie for dessert. They have the best brownies! Happy St Patrick’s Day to you too!

Irish Pro Tip – set the corned beef in the fridge for a few hours after it's cooked. It will set up and slice nicely without falling apart. Makes for a great sammich on rye.
