    For your 1st you did good 👍🏻

    The main comment I have is : when the timer starts at E10 you need to allow the countdown to begin while the knob is still on EXHAUST …. the reason is so that the canner can exhaust out the steam and equalize the pressure in the canner. It’s the same as “venting” for a stovetop pressure canner. When the timer gets to E0 it will beep and then move the knob to AIRTIGHT. In less than a minute or so the display will then start the timer to countdown for your canning time.

    By doing this you will have less chance of siphoning out while canning. Also when you take the lid off….wait 5-10 minutes before lifting out of the canner. This will also help with siphoning.

    The fat you’re concerned about is not a problem in your case. It’s not too much and since it’s sealed it should be good for a good while.

    Good point on taking the rings off.

    You did good! You will be canning everything you can get your hands on!
