When I was growing up, my mother had the uncanny ability to fix just enough food for everyone to get their fill without there being any leftovers. Consequently, as an adult I do not like leftovers either!

I never thought to use an ice cream scooper.. I will be using it the next time for sure.. I make extra mash potatoes just to have pancakes the next day..

There were two things that my Mom would do with left~over mashed potatoes, potato cakes (like yours but with onion mixed in) or spread them over meatloaf like frosting. I loved both so when I peeled potatoes I always peeled double!

Why would anyone want to mess up a potato patty by putting sour cream on it. Course, I don't like sour cream period. Enjoyed the video.
Noreen, I learned how to tell if your oil is hot, and it avoids splashing! Get a clean wooden spoon, put the end of the handle into the oil. If you see bubbling at the tip, the oil is hot!
I make these also but no flour. I find it absorbs too much oil. I use only one egg and add green onion.

Noreen, I love recipes that don't require exact measurements as my idea and preference is to make food and not (Mush as possible) have to worry about measurements which is particularly applicable to using leftovers or small amounts of food when short or I want to avoid tossing food out.

My mom used to make potato patties with left over plain mashed potatoes. She would and an egg. Bread crumbs minced garlic,and finely chopped garlic they were so yummy.
What size of scoop were you using? I want to try these but not sure if an ice cream scoop would be way to big. 🙂
