    Thank you, thank you, thank you so much for this oil free version! I tried other vegan YouTubers' recipes out but they all contained oil, and my attempt without oil in a pan failed miserably. Finally, an easy way to get the right firmness and texture without a sticky mess to scrub afterwards. 🙏❤💗

    I tried a mung dal omelette by Vegan Richa. The taste was great. The only problem is that a very good non stick pan is needed. I like the idea of baking it in the oven.

    I used this “egg” substitute mixture in a frittata for dinner tonight and it turned out wonderful. (Poured it over some no oil sautéed onions, peppers, greens and mushrooms— and then baked it right in the fry pan for 6-7 minutes.) Then garnished it with some “cheese” sauce and chopped tomatoes. Definitely a keeper.

    Oh, wow! Thanks! I used to make a veggie omelet with Just Egg and roasted veggies. It was time-consuming and often messy when folded. Your recipe, parchment paper, a pie pan, and pre-roasted veggies and I can have a beautiful hands-off omelet in 7 minutes!
