    I was proud that you gave the onion their respect but then was saddened to see you use store bought stock and corn starch. If you wanna be taken seriously, you should make your own stocks. It comes out cheaper than Swanson's and the flavor is unparalleled.

    Furthermore, using a cooked roux is the preferred thickener for stews. You can learn about cooked roux in Chef Jean-Pierre's video on thickening. He also shows how to incorporate flour into your stew, without making a mess of it, in his stew videos.

    Of course, if one cannot handle flour in their diet, it is what it is.
