I want to make that banana bread, but I'm confused. The recipe you showed, and the one you linked are completely different. Do I need to add more flour, at least? The loaves you showed the second day looked different.
We put things from the pantry that are close to expiring on the counter since the pantry isn't large. It gets used. Also, our frig freezer has four baskets. The two on the bottom are for fruits and veggies. One basket on the top shelf is opened bags of processed food so we know to keep at that. The other basket on the top shelf is for frozen leftovers and broths that we keep using. Our other freezer has a basket for chicken, a basket for beef, and one for pork. Veggies in the bottom are from the garden and extra ones. One shelf is for pizzas, and processed. Each basket has the meat in vacuum sealed bags stored vertically with the use by date. It isn 't always in perfect order, but it sure is easier and less food waste. This has helped us. Maybe it will help someone else. We finally found a system where things don't fall out or we have to dig to find it. When the containers are full, we stop buying.

I cannot believe how many packaged mixes, etc. she had in her pantry. Why buy all that stuff? Get back to basics and you will save to s of money. All those packaged things are way more expensive than making from scratch and do not save more than a minute or two in preparation time. Much healthier too!
Next time you make banana bread, I highly recommend a potato masher over a fork.

I wish I had a pantry. I just have a bunch of cabinets and drawers, and it's really hard to keep stock and use up things and just remembering what you have. I guess reverse meal planning is the way to go.
Do you date the items in your freezer in some way so you can rotate first in and first out somewhat? To use the oldest stuff first?

yes, more freezer pantry challenge meals. I'm doing the same thing. Only since there are just 2 of us and no teenagers; it's taking a lot longer to clear out things. Tonight, easy fajitas with some cooked chicken from the freezer, a sad red pepper, a small onion, some spices, EVOO, lime juice; char in the cast iron skillet, heat some tortillas, find some cheese, lettuce, sour cream, salsa toppings. Dinner is done. (Could add in refried beans and rice but I was lazy.)

I have a great pad Thai recipe.
4T sugar
4T fish sauce
4T lime juice
Mix. Soften your noodles ahead a bit in a bath of water. Saute chicken or thin sliced beef or shrimp in some veg oil. Add egg right to plan, scramble, add in noodles, add sauce, add some paprika to color, toss and stir fry until noodles are tender. Toss in chopped peanuts, thick sliced scallions. Plate.

I love the pantry clean out videos. Currently we are trying to build our pantry and freezers up as we are just starting out. Buying things on sale is definitely a game changer.
