    I usually cook for 5-7 guests. Would you recommend pan cooking 2 chicken breasts at a time and do you think it would be fine to put them on a sheet pan once they’ve all been seared then roast all of them at 375 for the add’l 10 minutes or til the temp is 165?

    Pan roasting is a beautiful system providing you use either a gas or electric stove. I have started using an induction cooktop and the do not recommend to use an empty pan without oil. In fact I killed one of my beloved pans trying to pan roast with an empty pan. Christine I love your recipes.

    Finally, a foolproof way to cook boneless, skinless chicken breasts. Thank you! I didn't use a cast iron skillet, but it didn't matter. As long as you can put it in the oven, any skillet will do.
