A suggestion blanch the Palak for about 10 mins purรฉe it use Sambar masala add tamarind water and jaggery. Then mix the khichadi into it.
Use ghee for the tadka simple mustard, jeera, kadipatta, byaadgee red chilli and adequate amount of heeng.
Personally would avoid garlic.

Good recipe,tried it, turned out really tasty,but my problem is that every time I make something out of palak puree,my puree on cooking becomes dark in colour like mehendi, please help me out

Made it some years back after seeing this video and my friends loved it. But with the tadka.. Just added ghee on top at the end.
Palak doesn't remain so fresh if stored in a bowl and kept open in the fridge as shown here. It's not at all a quick recepie.
