Thanks so much for the aqua faba hint. That will really help getting the desired end results. And adding the sprigs of rosemary is the perfect touch.
I used to do something similar to this, alternating layers of potatoes and thinly sliced onions. I used to drizzle with pecan oil. I haven’t attempted this since I went SOS-free. With the info you have provided in this vid, it looks like I’m putting it back on my menu.
I can envision sprinkling nooch between layers, and maybe sprinkle of chopped green onions on top after baked. The possibilities seem almost endless with this recipe as a base!
ps- I have also done something similar using sweet potatoes, and alternating layers with thinly sliced apples, sprinkling a bit of cinnamon over each layer. Sometimes I would sprinkle a few raisins or chopped medjool dates in the layers.
