Laura, my wife and I just made this meal tonight, and it was fantastic. We had to improvise a bit because we didnโt have enough zucchini. So we added a bell pepper. We also used both guyere cheese and Parmesan cheese. I added some red wine too. It really worked well. Thank you for all the great recipes and videos that you do. You are Fantastic!!!!!!!

I fixed this tonight!! It was perfect!! I had all the ingredients at hand from a previous Stromboli but only had yellow squash and Rattiatore!! All those little ruffles in the pasta soaked up the sauce and cheese!! Oh gurL!! It was DeLish!!!! Thank you!! Took me home!!

Cool recipe Laura.. My fav one pot wonder is a mix vegetable Rice… You just need to put in all veggies that you like with some bay leaf and cumin , fry and add Basmati rice… Stir for a while add spices and add twice the water as of rice.. Garnish with cilantro ๐
