The second and third dish looked fabulous. For some reason, I couldn't wrap myself around the mushrooms in the first one. It just doesnt seem like a matchup to me. I love mushrooms but sure that would work for me. Onion for all three. Maybe onion for the mushrooms in the first. Just thinking outloud. You do a great job and I thank you.

I never used to eat chicken thighs until a couple years ago. I agree with you, they have so much flavor & don't dry out as breasts tend to do. Happy Sunday Amber.
