    How many does this recipe serve? And do you think it would it make much of a difference if I used just a regular can of diced tomatoes and a separate can or half a can, of diced green chiles? Thanks so much! I’m a horrible cook! I don’t really like cooking either, but I’m really wanting to learn how to be a better cook. I appreciate how easy and clear your instructions are to follow!!!

    Many people don't realize that the rotisserie chickens from the supermarket deli often cost less than a whole uncooked chicken purchased in the meat department. I get them and use them for chicken salad, chicken and dumplings, chicken noodle soup, etc. Using a rotisserie chicken cuts down on prep time for other dishes. This chicken fajita pasta is a dish I will try next time I get a rotisserie chicken- it looks delicious

    Tess, I love your simple recipes. Good PA home cooking and recreating restaurant and other ethnic faves. My spouse had a colonoscopy and, using a similar "hash" technique as above, and to recharge appetite with a mild healthy meal, I poached some (4) thighs in existing stock. (Cats got the skin). Sauteed off peps and onion and garlic. I sauced by coating vegs with flour and added some of the broth and tomato and the chicken stripped from bone. Added boiled macaroni and fresh herbs. Voila. All is restored.
