    I’ve cooked eggs so many different ways but the best I’ve found is low and slow. You don’t have to worry about them getting rubbers or those little crispy bits forming (which I can’t stand lol) and they are so moist because you’re not searing and evaporating off all the moisture. Put the butter and eggs in the skillet and THEN turn the heat on medium low and cover. Come back a few mins later to check and scramble then if you want but I add my topping and then fold it over and cut the heat off and cover and let it sit a few more mins and vóila! Omelet style. But man this way does scrambled the best because they are fully cooked but not dry and rubbery. LOW and SLOW baby!
