    Wendy’s Oreo Cookies and Cream Loaf – Keto Chow Style

    Loaf Ingredients:

    500g egg whites, room temperature

    1 tsp cream of tartar

    1/4 Redmond salt

    1 Tsp dry vanilla

    1/2 cup egg white protein powder

    2 scoops or 2 packets, Cookies and Cream Keto Chow

    ¼ Cup powdered Erythritol or Monk Fruit (or your favorite powdered sweetener)

    2 TBSP Allulose

    Filling Ingredients:

    1/2 Cup Besti Brown Sugar Replacement (or your favorite Brown Sugar Replacement)

    1 Tsp dry vanilla (or use liquid your choice)

    2 TBSP Unsweetened Black Cocoa

    1 tsp cinnamon (optional)

    Directions:

    Pre heat oven to 350 degrees F – cook for 35 – 45 minutes

    In the mixing bowl add the egg whites, cream of tartar and salt and beat until very stiff peaks form.

    Mix all of the rest of loaf dry ingredients into a separate bowl.

    After you have very stiff peaks add the rest of the dry loaf ingredients and beat on low until the powder settles then turn up the mixer and blend until the dry ingredients are all mixed in. Do NOT over beat at this time.

    Filling Ingredients: in a separate bowl add all the filling ingredients and blend well with a fork and set aside. Reserve 2 TBSP for the black frosting.

    I use 2 silicon bread pans or another nonstick/silicon cake pan. Be sure to either use parchment paper or lots of olive oil spray so that the batter mixture does not stick. Be sure to also spray the rim really well.

    Take 1 tbsp of the filling mix and dump into the batter then fold once or twice, then add another tbsp to the batter then fold that in once or twice. Do this about 3 times so that you have nice swirls of the filling in the batter of filling mix. Make sure to just fold over once or twice each time you add 1 tbsp in. We don’t want to totally blend in the filling into the batter we want there to be streaks and swirls in the batter only.

    Add one layer of batter into the bottom of the pan then take some filling and sprinkle over the top, then add another layer to the pan then sprinkle with filling all the way up to the top of each pan. Press gently so that there are no air pockets as you go along. Take any leftover filling and sprinkle over the top then take your spatula and gently incorporate it into the top so that the topping does not burn and makes the top look marbled.

    Cook for 35 – 45 minutes or until done, then turn off the oven and allow to cool off inside for 30 minutes. Then remove from the oven and allow to rest for 20 minutes or until cool before cutting.

    Nutritional Facts: Calories 38 /6g Fat / 6g Carbs / Protein 7g

    Frosting is optional but it is delicious

    Wendy’s Cocoa Butter Cream Cheese Black and White frosting

    4oz Butter, Softened

    8 oz 1/3 less fat cream cheese, softened

    2/3 cup Swerve Confectioner Sugar (or other powdered sugar substitute)

    ¼ tsp Redmond Real Salt or Pink Himalayan

    ½ Tsp Liquid Better stevia

    2 TBSP unsweetened Cocoa Butter, melted

    1 tsp vanilla

    1/3 cup unsweetened coconut milk

    In a bowl mix the butter, cream cheese, cocoa butter, Swerve, salt, stevia and vanilla with a stick blender, adding in a little of the coconut milk at a time until you get the consistency you want.

    Split the frosting mixture into two separate bowls. Set one bowl aside for the white frosting.

    In the second bowl add the following for the Black Frosting:

    1 Tbsp Black Cocoa or more to taste

    2 TBSP Oreo Cookies and Cream Loaf Filling

    Place the loaves onto a cooling rack that has a cookie sheet under neath in order to catch the frosting that goes over the sides.

    Drizzle on the white frosting then the black frosting so that you get a nice black and white marble effect.

    Nutritional Facts: 104 Calories / 7g carbs / 10g fat / 1g Protein

    Ok Wendy this looks crazy good …but I have to ask ??? …..How does carb manager figure the total carbs of besti or allulose or swerve since we don’t recognize it in out body to raise our insulin levels …it looks bad when you put it in so I just ignore it …. Do you know?

    I think my all time favorite sandwich is a b.l.t. on toasted sourdough. Black cocoa powder can also be found in many Amish or Mennonite markets, they use it in whoopie pies and the wafer style cookie that are used for ice cream sandwiches. They typically sell it at a more consumer friendly price, like a lot of their bulk items.
