When I cook this soup I cook it then let it rest overnight then reheat, makes it really thick and delicious!

This is exactly the way my Mom made pea soup and the way I make pea soup. LOVE, LOVE it with homemade bread or fried bread dough (no confectioners sugar, just lots of butter – my Mom always called the fried dough "fritters").

That is one of my husband's favorite soups but only if there is a real ham bone involved, haha. I'm not allowed to put any carrots in it but…ssh, I just fish them out before serving. He also requires the peas to be slightly underdone. I like your idea of the potatoes but that would definitely not work here. Hubby is pretty darned particular. Good thing he's so cute.
