Regarding making powders: Darcy Baldwin at The Purposeful Pantry teaches to dehydrate the produce until it is brittle, condition it, grind it into a powder, condition the powder, and then store it in an airtight container. Conditioning makes sure your dehydrated produce and powders are completely dry. You probably do that. I may have missed that if you mentioned it.
