    I fell off the pantry challenge bandwagon for a week because I was out of town on vacation. Getting back to it now that I am home! I did buy $25 worth of groceries yesterday, but I am making that last a couple of weeks with the stuff I already have on hand.

    i cant hack rice pudding because usually people have the eggy bits in it. i once got a wooden spoon broken on my bum cause i refused to eat Nana's bread pudding. lol

    I was so worried about that pumpkin rice pudding it was like you were making egg drop soup… I wonder why it wasn’t like a baked pudding I would’ve mixed all the wet ingredients mixed in the dry and baked it.. God bless you for still eating it I could not eat it with those chunks of egg… I think I would’ve taken the leftovers… let it cool beaten in a few more eggs and baked it off put all brown sugar on the top and get a little crusty… But that’s me because I’m weird about pieces of egg particularly egg whites

    That pork/apple thing sounded amazing. I bet you could come up with something great with those egg roll wrappers/ground pork/sprouts and the Thai chili sauce you had left! Maybe with fried rice?

    Probably use the egg roll wraps and just cut them. Mix the pumpkin with garlic, spices and some cheese.

    Also you could do a pumpkin lasagna which is super yummy (I used to do that for my vegetarian thanksgiving many years ago).

    Loving this series! It inspired me to do a little pantry clean out too. With the cherries, you could do a cherry cobbler. You can make a crust with flour or you can use oatmeal crumbles or even a batter depending on which recipe you use. Also you can use jams to flavor oatmeal, rice puddings, pancakes, muffins, etc. Instead of fresh fruit. Just keep in mind that the jams are also sweet so don't add too much sugar lol. Not sure what to do with the molasses but if youre ever out of syrup, it's a great substitute! You're doing great, keep on truckin

    Great job! After day 37 or 38 I bought fresh produce and cheese and yogurt . I'm feeding my husband and 4 children and myself and we really missed fresh fruit especially. So on one hand I feel like I failed my big goal and on th other hand 103 for a month for 6 people isn't awful and I'm still working on using odd bits and cleaning freezers and cupboards and canning shelves.

    I have a gas stove and the igniter went out on the oven so I've been baking in my air fryer toaster oven lol. blah. I can't wait to get it fixed but I'm afraid to mess with it since it's gas. Going to call the repairman on monday i think.

    I didn't get a chance to comment last week and I'm late this week, but rest assured I made sure to watch! 😅 I really enjoy watching your videos every week.

    I've made a low mein stir-fry using grated carrots, broccoli, a package of ramen and some soya sauce. You could add other veg if you want, like pepper, onions, etc, but it's another option for using those frozen grated carrots. You could also make a grated carrot salad, carrot muffins or morning glory muffins too.

    I've never added egg to my rice pudding. I found a recipe where you cook the rice in milk or cream. Evaporated milk that is not diluted as heavily also works. You have to cook it on low heat or the milk will burn to the bottom of ghe pot, but it will thicken without needing to add egg.

    This weekend I made a really nice beef barley vegetable soup from 1 small steak. I boiled the steak in beef broth until cooked, the pulled it out and diced it into small pieces. The beef went back into the pot with some barley, then simmered on low until the barley was cooked. Then I added some frozen mixed veg and 1 potato, again simmering until cooked, and seasoned to taste before serving. The meat was so tender! Perhaps this is an idea to use up the last of your beef broth.

    Love your videos! What about a "Baking Week" instead of cooking your meals you could create ones for the oven only? Or, try creating only desserts one week? You can continue using your pantry stuff for other meals behind the scenes. Whatever you do, I'm sure it will be fabulous, keep up the great work!

    I think you outdid yourself this week! I love lots of homemade soups in the winter. It looks like you have about the same amount of snow as us. We have finally warmed up to -3 so I'm grateful for that. It's kind of a miserable winter here in South Ontario.

    Nice! You’ve inspired me to use a taco sidekick for dinner. I’m browning 1/2 lb ground beef and mixing it with the prepared sidekick, a can of tomatoes with green chile and drained cans of corn and pinto beans. We’ll top it with shredded cheese and salsa! Looking forward to your next installment!

    Oh My Gosh, I wouldn't have thought to use the Papa John dipping sauce!! Have you mixed pumpkin with pancakes? Pumpkin muffins? Pumpkin and rice as a dessert? I have watched so many January challenges, but I always love how surprised you sound when something works out, your videos have been some of the most creative so far. I had never thought to use those sidekicks in soup. Your videos make my week, have a great evening.
