    Hi miwa can u continue to feature non vegan versions as well. I like to eat healthy but I can’t cut out meat cos my family is not ready for it. And I want to learn how to handle meat skillfully.

    Thank you so much! I've made vegan ramen at home before, it was great, but I simmered the shiitake broth for three hours! I didn't think of soaking them overnight instead 😉 I used smoked tofu for the protein and bok choy for the greens.

    I though it said “gluten free” at first, no “guilt free” and I was so excited lol! 😅 I have Celiac disease and I would love to see some gluten free content! 🙏🏻😄

    My recommendation? Make a very high quality STOCK IN ADVANCE from Chicken or Pork or Beef or Lamb/Mutton then add the Kombu/Dashi Stock (takes 10mins) to make a double-stock !

    Then with these pre-prepared, simply add your modular ingredients:

    1. Noodles
    2. Meat
    3. Vegetable condiments (eg grated carrot, pre-fried mushroom etc)
    4. Ramen egg
    5. Nori
    6. Tare (infused oil topping eg chilli oil)

    If the stock is done, the above 1-6 can take 10mins or 15mins at most !

    I think the meat based stock is very nutritious and flavour enhancing. A vegan version is tasty as an additional option.

    The above is as good as "instant Ramen" but rivals "real Ramen" also. Equally you can make it healthier by modulating both the fat and salt content to your preference. Eg add Soy Sauce or Miso to Rice Wine Vinegar and Cooking Sake etc.

    An additional tip: I find "charring" pork when using really adds an extra dimension also or using high quality mushrooms for extra "umami". A variety of Tare oils equally adds great variety of flavour. For noodles there is even the option to use vegetable noodles such as spinach noodles to reduce carbs or GI index as well. There's even a kitchen accessory that allows you to grate vegetables into noodles too.

    Such a meal above:

    1. Economical
    2. Logistical
    3. Energy Efficient
    4. Delicious
    5. Nutritious
    6. Cultural (Japanese: Make sure you use a proper Japanese Ramen crafted bowl as Miwa uses in the video!)

    The irony of this video is that it is SHORT because it is such a divine dish!

    I definitely want to come to Japan one day! It's VERY far, about as far as it could be while still being on the same planet lol. I think I'd like to wait until I can stay for at least a few weeks, partly because there's so much to experience!

    It's like you have a list somewhere, of the dishes I want to try! I've wanted to learn to make ramen for ages, and I think this recipe may be the one I start with! It's winter here now (BOO!) so it's definitely soup season.
    Speaking of soups, what do you think about trying some soups that are common or traditional in the areas where your viewers live? Maybe you could have a poll and make the top 2 or 3? Obviously nothing that's super unhealthy, and you'd need to be able to find the ingredients, but there's lots of nutritious and delicious soups out there. 😊

    I usually don't eat ramen since it's often to heavy and fatty. This recipe would also be great if you make like iri dofu stirfry with like the tantan men style seasoning 🙂 You can make vegetarian or vegan tantan men that way.

    It's been so long since I've been to tsukushima. I think it's been almost 10 years. I love the small tsukudani shops you still had there (not sure how many are lest nowadays). and in teh summer the matsuri was fun. But I didn't eat any monjayaki. should go back for it hahaha I would definitely add mochi. I did see a monjayaki making meal kit at Haneda airport once. I wonder if I could find a recipe for making it at home.
