    Hi Claudia! I’m originally from New Mexico, so using NM chile pods or guajillo chile pods are THE way to go for taste and color. I love how you paired either with chile anchos and arbol chiles. Even though, I’m of Japanese descent, I wasn’t raised on Japanese food. I was raised making Mexican food from scratch, so I absolutely LOVE your recipes! We love enchiladas in this family. We also love having leftovers with eggs the next morning. Thank you for sharing! I have to know……where did you get your baking dish?

    With good homemade Mexican food there is always a good deal of prep but so worth the work and wait! That’s why I love our local Mexican restaurants. I’m always sure to tell my waitress to give the cook my thanks and let them know that their work is so appreciated and delicious!

Also when I see people all over the world enjoying and making, I remember a time not that long ago when Mexican food was hard to find outside of the southwest! Here's a story I think you'll enjoy–I was born and raised in California and a dear friend of mine from Visalia went off to college at Princeton University in New Jersey! About a week later I got a phone call from her and she was LITERALLY crying! WHY? she went to a place in New Jersey–and this had to be the mid-1970's or so–that CLAIMED to make Mexican food. She ordered enchiladas! And what did they serve? MANICOTTI with CILANTRO on top! ROTFL! Good things times have changed, huh? Looking forward to your book, and thanks for the delicious videos!

    This could be a casserole and so as not to role each tortilla…….I just bought ancho, arbol and guajillos chiles a month ago and am experimenting with salsas, pot roasts and hot sauces. She didnt saute the roasts, a big time saver.!

    I had a rare opportunity to dine in a Mexican restaurant in Canada today… Steak burrito with guac and a churro for dessert. It was good. It was actually really good. But all I could think the whole time was, "If Claudia had made this…" 😃😋🌯 (Also, that strawberry shirt has got to be in the "Top-5 Claudia OOTD")
