    Charlie, you have a true gift for presenting on camera…I find your videos to be captivating and soothing at the same time. My only suggestion? Go back to a shorter beard like your earlier episodes…or wear a beard net.

    I lived in Lafayette for 20 years and never heard of this! I'm really curious because it seems like a spin off of a bienet. Does the rice texture come through or does it blend in and dissappear into the batter? Thanks for a new dish many of us may not know about! 5 fist pumps to you, Charlie! 😉

    I've been living in New Orleans for 20 years and I've never heard of these the only thing I heard about with this powdered sugar it's beignets and I can't eat them I like them but I can't eat them

    I've never known about Louisiana Calas, so it's definitely worth trying. Thanks for sharing the history. I like the color when it was removed from the oil, but they appear to darken before powdered sugar was added. Perhaps that's due to video lighting. If not the case, can I remove from the oil a little sooner so they don't darken?
