Why pour off the seasoned meat juice? It has the flavour and nutrients for healthy connective tissues. You only replace it with vegetable oil (highly processed) butter and greasy cheese. Try reducing it in the meat and keep all the flavour.
Also, your noodle water will tjicken your sauce as it has starch from the flour in the pasta👏👏
