I have an electric pressure cooker that is not an instant pot but it will probably work just as well. I don’t use it very often.

Hi, Jenn! Could this be made with shrimp instead of chicken? My son doesn’t eat meat. I’ve made shrimp Eggroll in.a bowl on the stove, but I don’t have a lot of experience with Instant Pot. In fact, I only have an older Wolfgang Puck electric pressure cooker from several years ago.

Love Egg roll in a bowl, never thought to put in uncooked cabbage and carrots, or to serve over cauliflower rice! Thanks for the tip, I will definitely try this! Looks like a great meal prep for work lunches!
