Debbie, there are arrows on the lid to line up, to close easily. Also, after you hear a beep, you can not re-adjust things. Hope that helps. I am still learning.

I do like the Interpot better in the instant pot but i like my pressure cooker XL much butter. With the instant pot i fine i have to cook longer than it tell you too.

Hi Debbie. Back in the 1960's I opened a lid too soon on a regular (old-old) on-the-stove pressure cooker. I didn't burn myself, or make a giant mess, but the lid removed itself with GUSTO. I had a good hold on it, and had it facing away from me, or it could have gone a lot worse. I was pretty young and agile, so it was only a big lesson, and not a big disaster. This is the first time I ever told anybody, because my mama and my grandma would have been soooo mad at me for my carelessness. Never, ever made that mistake again.
Sounds delicious, Debbie. Do you by chance use "Sea Salt"? I've used the "Pink Himalayan Sea Salt" for years. You wouldn't believe how much it enhances the flavor of everything you cook with it. It's really amazing and works with your body, unlike table salt with all the sodium that bloats you up. Himalayan Pink Sea Salt is also good for diabetics. It can be used as a natural detox, and put in your bath.
Now let me tell you about one of the stupidest things that I've ever done with my instant pot. So we have a small kitchen, and there's not much room, especially for a big 8 quart instant pot. So I put it on my stove thinking that it'll be okay as long as I don't turn the burners on. All of a sudden I smell this terrible toxic burning smell. Turns out that while I was trying to get the instant pot level on the stove, I accidently turned one of the burners on high!! I was so worried and felt like a compete idiot. But LUCKILY it only buned a hole in the plastic vent at the bottom and didn't touch any of the wiring. We unscrewed the bottom to make sure. Moral of the story…never put your instant pot on the stove! I love my instant pot btw.

Just use your soup/ meat button. Lower time if need. If meat is precooked. Then you don’t have to natural release.
Watch your fill line. This is my fav soup. Never tried can potatoes. Will try.
