Today we’re making lemon chicken orzo soup. This is a great way to enjoy a hearty bowl of chicken soup. I hope you enjoy it!

    This was a fun one and a bit unexpected considering James loved it two weeks ago when I shot the print recipe for our website.     Great Friday night tv! 80 here in Los Angeles but Im making it for dinner. Made stock last week. Sometime I buy a Costco rotisserie chicjen to make fajitas. Only use the white meat. Put carcass in freezer. When I have 2 I put chickens, lg onion, carrots, celery & head of garlic. Fill with water..cook for at least 90 min. no salt costco chicken has salt. Pull out carcass, pick meat off , strain and freeze.

    This is almost exactly how I make soup. 😁 I skip the flour and use a little gelatin to give it body. A good cheat – debone chicken things and toss the bones in some store bought broth and simmer for an hour. Then Cook the meat in the soup. Meat tastes amazing this way.

    Pro tip; cook the orzo or noodles separately until just cooked. Add the orzo when serving. Otherwise the orzo/noodles will suck up all that delicious broth and become thick and mushy for tomorrow's soup. Freeze the base soup for another day then just reheat the base and cook up some fresh noodles for the next batch. Ofcourse you can just eat it all in one go. 😋 maybe add some Parmigiano Rigeano?

    I liked when you shook the lemon at him. Everyone lately is cooking with chicken thighs, it's the thing to do now. I live in a country that does not sell chicken thighs, not at all, not a single store. You can get a whole chicken and separate it, which I have done, but the thighs are tiny. You can ask for them at the butcher shop, but they are also tiny, and super expensive. The size is probably due to the lack of growth hormones, I don't know. Whenever I separate a chicken myself I'm always so disappointed in how each thigh is only a couple of bites, it makes me mad and homesick for America where one thigh is enough for a meal. I ask people, I even asked a butcher, why you cannot buy thighs and they don't know. The butcher said there is no demand for that piece of meat.

    I was never really taught how to cook growing up, both of my parents worked full time jobs and I ate a lot of TV dinners outside of my moms cooking. Your channel has made me soo much more confident in my cooking and its soo easy to follow. Thank you!

    It is YUMMY! SO I'VE BEEN WANTING TO MAKE CHICKEN STOCK FOR MY GRAVY FOR THANKSGIVING BUT BEEN TOO LAZY SO I FIGURED I'D DO IT NOW AND THEN I TOOK THE CHICKEN THIGHS OUT AND THEN I USED JUST REGULAR STOCK FOR MY SOUP I USED 10 CUPS AND GOOD THING I MADE THAT OTHER STOCK AND I PUT MY FROZEN CHICKEN BONES IN THERE SO I'D KEEP COOKING SO I GOT IT TWO FOR ONE DEAL BUT THEN I HAD TO PUT MORE STOCK IN LIKE TWO TO THREE MORE CUPS BECAUSE I DIDN'T MEASURE THE ORZO WON'T DO THAT AGAIN!
    IT'S SO LIGHT BUT YET HARDY AT THE SAME TIME I LOVE IT!

    Oh SNAP – dissed for an icecream sandwich. It looks good to me and as usual, my cat, WeiWei is very excited about the chicken. But he can't have parsley, so maybe we will go with thyme and oregeno. I like the lemon addition and WeiWei likes lemon thyme. So we're in business! Yummy and a good pop of vitamin C in the winter. Our very warm 90' winter in Texas…

    This recipe is amazing! Only thing I will say as a word of warning, it does NOT keep as a soup. If you want soup you have to eat it right away. If you store any in the fridge or make it an hour in advance, the orzo will soak up all the moisture in it and leave you with a pasta dish. Didn't bother me, it was delicious either way, just worth noting.
