Just wondering, but wouldnt it be better to season the potatoes in a bowl or something that way you dont have to do them individually then you could proceed to putting them in the muffin tin?

These look delicious! I think with a pinch of onion powder on the unseasoned layers would push them over the top. I'm already planing some skillet potatoes (no MS video AFAIK, search Jacques Pépin's Potatoes Fondantes, if interested) for tomorrow, but these will be on the menu sometime next week. Paired with a couple of sunny side up eggs and a sausage patty or two, and you may have a hash brown replacement here.

Wouldn't it be a little easier if you put the smaller diameter slices first, since muffin tins tend to be slightly conical? 🤔 Definitely adding this to my small, but ever growing, repertoire. Thanks Sarah!

Ugh. I had to fast-forward–I couldn't get through the shots of Sarah haphazardly running that potato over the mandoline without a hand guard. She's an experienced professional and I'm sure she trusts herself, but I've seen enough ThreadBanger videos to be totally wigged out by it.

Delicious appetiser/ side dish!! I'm making almost the same putting alternately one layer of potato and one layer of prosciutto, adding a little bit of nutmeg in the cream.
Thank you for all your delicious recipes!
