i for 1 will not buy a few of these, great example the flat iron, what they did was figure out how to cut items different, "to maximixe profits" so the old Chuck Shoulder, now has a section cut off it, and is smaller in size than it once was, so some marketing guru can claim a new cut of meat & charge you double the price for shoulder, yeah! maybe not quite double, but close, and I have refused to buy, its still a section of chuck shoulder, just marketing…
i am a professional meat cutter, and have been for nearly 40 years, so I know what i speak.
Cube steaks are suuuuper cheap and surprisingly low in fat and impossible to chew gristle. Less than 5 bucks for two steaks. Makes sense that they're used for chicken fried steak at diners.
I grew up on chuck-eye/blade and they are arguably my favorite. Absolutely fantastic steak that is often cheaper because where I live they tend to keep the "eye" with the rest of the chuck when they do the "cross-slice" across the whole primal. They get big too (I've seen 'em as big as 35oz) and are great with a marinate and a quick sear. Its like fillet though… You don't wanna cook it too much.

Cut eye of round into cubes, pressure cook for around 40 min with salt, pepper, broth and red wine, move them to a sheet and dry in oven for half an hour at 200F, finally toss with any dry BBQ rub of your choice. You got Mongolian jerky which is super flavorful.
