    Crumble some Milk Bikies biscuits (or your favorite cookies) to dust, then add cocoa powder(optional), mix with melted butter till you get a wet sand texture. Pat it down in the mould. Make sure to freeze this before adding the next layers.

    Second Layer:
    Mishti doi, which has been hung to take out all the water! This is important because otherwise the excess water will ruin the texture.

    Third Layer:
    Equal parts Mango Pulp mixed with Cream cheese in a mixer. Freeze the previous layer before adding this one. If the mango is sweet enough you don't need to add sweetener, just taste the mix before you use it. Personally I didn't add any sweetener, because the mishti doi layer was already very sweet.
    If you want it to be easier to cut and pretty, add gelatin.
    10g gelatin powder for 250g of cream cheese works well for me, but read the instructions on your gelatin packet.

    Last Layer:
    This is optional but I wanted to create a contrast, so I added mango pulp to a little bit of cream cheese( 1 tbsp) just to add a little bit of body to it.

    That's it! Decorate as you like, but I highly suggest adding the mint, it tastes amazing with the creamy sweet cheesecake.
