    YUM!!! I am not vegan … not even vegetarian but I love potatoes and make a LOT of beans so I can adapt. As a 1 human household, the freezer is my friend! AND I love "souper cubes" (Amazon and other sources) – I freeze many things in the cubes (1 and 2 cup). I think they would work very well for this. Thank you for the recipe!

    This recipe was delicious!!!
    I didn’t follow the recipe exactly, but it is a very forgiving, versatile and comfort type food. I wanted to experiment, so I made three individual casserole dishes and six muffin size. I loved them both ways, but I will probably stick to making them in silicone muffin pans… so I can freeze the leftovers.

    I am a such a potato lover! I usually make vegan chili with rice and beans on the side once or twice a week. I like this variation using potatoes. I have little baking cups that I can finally use. Thanks for another wonerful recipe! Yeah!

    I would have to change up this recipe because my husband doesn’t like Mexican food, but I will try to put my thinking cap on and make something similar…
    I watch you cook, and we cook so alike the way we do things. I think we even have the same exact knife, which I was just using to cut up red onions before I saw your video…

    I’m not Vegan but I’m game for anything having to do with Potatoes! Yum! What’s not to like? Lol I’m not a fan of grating cheese either ..I put it in the freezer for only a bit and put it in my mini food chopper/processor …works great!

Ohhhh and instead of the vegan option of meat that you have, I have a homemade bean mixture in the freezer… and that will be good enough. I think this will be dinner tonight or tomorrow! Thank you.
