Amy, that looks like fun. I wonder if you have experimented with that dish since you made this video – you could take it a lot of ways – mix all of the dry ingredients together and use as a dry rub on the chicken, you could add andouille or some hot sausage, etc. Instead of the jarred sauce, I would blitz some onions, peppers and fresh or canned tomatoes in a food processor for an additional layer of freshness (and less chemicals, lol). Love the cheese at the end as well !
Great variation on a theme. I made it tonight after a long day weed wacking in the garden. I use 8 chicken thighs covered with Olive Oil, 2 chayote, 3 celery stalks, 2 white onions, 2red bell peppers, 1 canned diced tomatoes, 1 cup chicken bullion, 1 packet of taco seasoning, and fresh cilantro, poured over rice! Yumm! 😉
