Shredded pork, even bbq, make good taquitos. I haven't used my air fryer for that YET, but I do plan to. With regular pork, I dip in green salsa and sour cream.. just sour cream for the bbq.

I made you Swedish meatball orzo and love it. My husband didnā€™t enjoy the sour cream so I think I have to cut back. It was so easy with precooked ground beef I had in the freezer. Canā€™t wait to try a few more.

I have always made the 3 ingredient meatball recipe with meatballs, a jar of grape jelly, and a bottle of chili sauce. Delicious! When my kids lived at home they were always excited when I made these.

Mindy mom used to make a cold plate of cottage cheese with fruit or cottage cheese with veggies of choice, tomatoes, olives, what was available. Easy clean up as well.

We cook pork shoulders in our sous vide with basic seasoning and when it comes out itā€™s super juicy and the flavor is throughout the meat. Then we shred it and put some in the freezer for later use. My favorite thing is BBQ pulled pork sandwiches with coleslaw on them. Itā€™s so delicious.

I noticed you guys don't eat much SEAFOOD. Maybe due to an allergy, but we love cooked shrimp in summer. Makes great ceviche and chips, or fish tacos. Love your channel!

I starting adding convenience items to my monthly shopping trip to try to cut down on ordering out and to have a quick dinner on the fly. Chicken patties, hamburger and turkey burger patties, French fries, cheese tortellini etc.

Grape jellyā€¦ nope, Iā€™m still like ā€œgrape jelly??ā€, but my fatherā€™s side of the family is split between Napoli and Sicily. Iā€™m down to make anything thatā€™s kosher if it means the kids will eat it, but quarter-Sicilians ainā€™t touchinā€™ that lol.

I used to shop after work so I was already tired, my go to meal after shopping was a rotisserie chicken, deli potato salad and baked beans with pre-made corn bread and clementine for dessert. Then I started putting the groceries away, I usually got done with this chore at like 10pm. The kids always looked forward to grocery day dinner.

Thank you Mindy for those ideas. School is not done until June 29 here in Alberta but soccer season starts and it will be crazy some days with swimming camps and music lessons too.
