    I made this when I wasn't too far post surgery so I skipped the sugar free cookie crust and I could only have a few bites of it but it was very good! I made a lemon flavored cheesecake and my brother loved it too. Tomorrow I plan on making it using the cheesecake flavored sugar free pudding and I'm making an almond crust and topping it with fat free whipped cream. It's funny how now that I'm a little over a year out from surgery I can easily eat one of these babies and I could only have three or four little bites the last time I made it!

    I have made these 3 times. My mother is diabetic and loves sweets and especially cheesecake. This is so easy and delicious. I eat them (not diabetic) to save calories.
    I can't find sugar free cookies that fit so I make my own with Voortman Shortbread Swirl Cookies and add melted butter. I press this in the bottom of the cupcake liner.  I add a little sugar free strawberry jam on top. Thanks for sharing, we love them.

    u r such a sweet lady. thks 4 recipe, i luv cheesecake. i think i used too much milk tho, unless i need bigger jello? i cant get it to set well but its delicious!! im putting it in freezer i think. thks again!!

    Oh my gosh, thank u sooo much! I have a neighbor I've known now for more than 20 yrs, she lost her hubby a few yrs back and now she needs some loving care. I'm not her official care giver, I just beleive we need to take care of our elderly… so I cook, clean and do a few errands for her here and there. She's a diabetic who loves cheesecake which she can only have once in awhile. Who knew I could make this same taste sugar free! Truly… thank U sooo very much 🙂

    I am really confused about the SF jello pudding mix. Do u just combine it with 2 cups of milk and mix them together then put them with the cream cheese or what?? Lol I don't know. and also, my family only buys 'fat free' milk. :/ would that still be ok? Or do I just put more or less cups? Or it would completely affect it?

    @MysteriousButterly sorry no the almond milk will not let it set….you can use 2% or skim..hope you make and enjoy after you make them you can freeze them ..like ice cream really good..big smiles…love rosemary

    i live in the uk and they dont sell jell-o here but really need something sweet like this so i found a site that sells american products but they only did the chocolate not the vanilla so i hope they turn out ok thanks for the recipe x

    @225down150togo your so welcome and if you add trivia to your strawberries and let sit for about 30 or 40 min. it will make a glaze to put on top …love ya..love rosemary let me know how you liked

    I just made these and put them in the freezer omg it is like eating ice cream So so GOOD thanks for sharing my sis love u !!!!!! oh yeah i put the rest in a bag and put them the freezer so i am only eating one a day yum yum !!!!!

    @allisonpacino Not sure sweetie did you use 2% milk and only 2cups? maybe if you put them in the freezer for a few min. they will firm up…sorry but I really could not tell you….love rosemary

    I made these and they seem a bit soft…I wonder what I did wrong? I used the same big box of sf vanilla pudding…I did use the reduced fat cream cheese…Could that have been it? It's great ,but doesn't peel back like yours 🙁
