    As a native washingtonian even though we dont have an official state food lets be honest, its some varient of smoked salmon. I argue its a honey dijon glazed salmon filet smoked with applewood over a bed of rice with a light dash of ponzu.

    This incorporates the most prevalent parts of washingtonian culture, including our major native american influences with the smoked salmon, our state fruit with the apple wood, our heavy east asian influences withthe rice and ponzu, and the honey dijon glaze just ties it all together.

    Just a small nitpick from a beer guzzling cheese addict from the frozen wastes of Northern Wisconsin: you should try to find the freshest curds you can get your hands on. That said, it's understandably difficult to find these bits of white gold outside the state. As shown in the clip, a good white cheddar block cut into cubes CAN work, but you won't get the signature "squeak" like the real deal. They look amazing, though. Well done!

    If you vist Brasil, you'll encounter vendors on the beach selling what is called 'queijo qualho'.
    It's BBQ'd cheese that doesn't melt and is delicious. You'll see them walking down the beach with a tiny BBQ swinging by their side.
    Don't drink a caipirinha on the beach-beer only. Bad booze will leave you with a headache like you've never had.
