    My paternal grandmother used to make a caramel pie from scratch with a meringue topping. She died when I was a kid and no one, including my mom, who is also gone and all my dad's family and no one still living ever got the recipe for it. I think it's probably because it had only a few ingredients. She would caramelize the sugar in her cast iron skillet. I think she added cream, butter and vanilla. I've never tried to make it. Unfortunately, I didn't have a big enough cast iron skillet until recently. Plus I'm clueless as to the ingredient proportions. I'm a good cook but I just don't really enjoy it. Mom was an excellent cook (every person in both families would agree). Mom made it was delicious but admittedly, not as good as good as Grandma's. I wish I'd known that I would miss her version too as that is the ONE recipe I don't have. The "old time" cooks rarely had written recipes but I did manage to get her to write some out. Would love it if you could figure it out for me in your spare time – LOL!!

    That’s how I make simple doce de leite (aka dulce de leche, aka the best churros filling). I would cook longer though.
    SAFETY WARNING: if you don’t use enough water and it dries out in the pan, the can could explode. And be sure that it has fully cooled inside, sometimes the can is cool to the touch but unexpectedly hot inside.

    I don't know if they still do, but this is how O'Charley's made their caramel pie for decades. No Instant Pot, just a longer cooking time. I made it for my parents. My mom loved it, dad wouldn't touch it. But it was delicious. 👍
