Never had a good Tom Yum soup in US . They upgrade the ingredients for broccoli, tomatoes and another stuff to make cheap.
Don't add galangal? That is wrong…without galangal you don't have Tom Yum soup….just some lemongrass and chillies soup. But agree with all. I keep all the lemongrass and galangal in my soup. My friend already knows they can't eat that

gonna get flack for that but I love to add some pineapple chunks to my own Tom Yum soup. especially with fresh pineapples, it adds a light sweetness while working well with the savoury parts of the soup.
