    Stephane: when you load the tart with the figs, plate the pointed end of the figs toward the center. The figs will layer more evenly, and it will provide a more elegant presentation

    I am still not sure about adding the raspberries, but as a fig tart that looks delicious. I will have to plan a special weekend to fix this when the figs are in season.

    I agree that French cooking isn't hard, at least not the dishes I make. Yeah there usually is a ton of mis en place but it's not that difficult, kind of high maintenance though…..I can't just throw everything together and walk away, it needs constant attention. But that's okay, I love French food!

    Was wondering if you have any good recipes for gooseberries? I love them but usually stick to gooseberry fool or gooseberry clafoutis, though I also use them in savoury dishes like with mackerel or pork.
