1/2 cup melted butter
1 lb glutinous rice flour
1 tbsp baking powder
pinch of salt
13.5 oz can coconut milk
5 large eggs
2 cups sugar
1 tbsp pandan extract
1 cup ube halaya/jam
bake at 375F/190C for 60 min
to me pandan doesnt particularly taste like anything. it just adds fragrance to the dish! also, yummy looking dessert you made there ☺️
You should tried to make Indonesian mini sticky rice cake filled with brown sugar and coated with grated coconut outside it's called Klepon. It will pop in your mouth when you bite it!

There is a Malaysian dish called kek pandan. Basically cake but flavoured with pandan extract (traditionally we blended the pandan leaves with some water). You should try make it!
