I know what you mean about your family possibly judging you for tweaking the recipe a little bit but as long as it tastes good to YOU, that’s all that matters 😁.     For the noodle based dishes, you can try Banza pasta (garbanzo bean based pasta) or something similar. I us e it faithfully for all pasta dishes and it holds up well plus the taste isnt noticeable. If anything, it kinda feels/tastes like whole wheat pasta

    Omggggg Pad Ka Prao is one of my favorites and you did a great job with the low carb Paneng curry! I’m going to try it this style. 😭 I’m craving so much Lao/Thai food… My husband made Sai Oua today and I opt for a salad instead.
