    OMG, Wes… 4 servings?! That looks like one serving to me. I hate that I can't have it the way I want it but yours is the only "simple" recipe that isn't all creamy and disgusting that I've found so far! I hate that I didn't make it like this this morning.

    I used to make grits every Sunday morning in my pre-keto life. I really missed having them; so, I thought I'd give this recipe a try.     I like to thaw the cauli when I get it home, rice it in the food processor, and then re-freeze in containers to have it on hand for a quick dinner like chicken fried "rice" or pilaf or maybe this.

    I was going to make a prawn salad, but now I’ve seen this I will make it instead. I’ve been keto for 7 months and yes I do miss corn, I love corn, but going keto my overall health, including diabetes has been so beneficial. I do get really frustrated when people give you ‘that’ look, keto are you mad 😠 it’s not good for your heart or cholesterol eating all that fat! Is there another cheese that could be used?

    What I really liked about this vid was the "learning" moments you shared. I already knew these things but I liked the mention of "local" or "fresh" vs frozen Veggies (and fruit mind you), and the explanation of the number on a bag of shrimp. 👍👍🙂🙂
