That looks good to me! I would think jalapenos or hot sauce might be a good addition also. I think I would put some of them on a bun and make a sandwich too.
My wife hates mushrooms, so we order the Alice Springs Chicken with grilled onions instead, amazing. Going to have to try this, the prices out at these places is out of control….

i don't have a traditional blackstone what i have is a two burner outdoor cook top with a heavy rolled steel flattop griddle that's removable. got it from a company in Texas, i live in the south where its hot and muggy. even with a good cleaning, heating oil on it after cleaning, and keeping it covered i constantly fight light surface rust. is there any other option other than taking the hardtop off and keeping it inside
Do you have a link to that black cutting board? That looks like the same one that Sam the cooking guy uses. I always thought that it was made out of some kind of a stone or something and I wonder why everybody is cutting on them. So what exactly is it made of?

It looks great, but I was hoping it would be healthy. Not trying to be difficult but that's going to require 20-30 minutes of cardio to put a dent in the calories from fat. Looks good though. I need to get on a diet so I think I'm going to steam my breasts.

I totally agree, marinating with a mayo based sauce is pointless. I would do it just the way you suggested, layer it after it’s done, a lot less mess to clean up along the way also.

We have done a version of this quite a few times, but I do it on the pellet grill.

Griddling chicken first then basting makes sense.
If you aren’t going to marinade, what are you going to season with prior to throwing it on the griddle?
My wife just made something simular this week. We will just have to add some cheese and bacon. Looked really good. GRIDDLE ON DUDE.
I would do this, I'd vacuum marinade chicken for a bit ahead of time, looks delish!
