    Just thought you should know that here at Hick’ry Holler in west central Indiana, we have been cooking like we might be on A Good Life Farm in Alabama. We put Curry Pickled cauliflower in the pantry and last night we roasted what remained of the second head of cauliflower with our supper of Sloppy Joes held out from your recipe that put 8 beautiful pints in the pantry (and at least 2 fresh meals for the two of us). Did I mention I had some oranges that were getting a bit dry? Well, there is no evidence left of the scones made from your recipe. Mr. Abbott says “Those cookies were pretty good!” We’ll use up some lemons next time 😉 I really did not set out to cook/can specifically from your playbook this past week, but it worked out beautifully AND it cleared some space in the freezer for that ice cream that was on sale! Seed starting season and “canning up the freezer” season come close together this time of year. I love the secondary benefit of the heat and moisture canning adds to the deep winter chill here in the Midwest! Thanks for some good eating!

    4 turkeys! wow…I don't have an extra freezer but I do have a LOT of meat in my fairly large refrigerator/freezer. I've been thinking the same thing about losing all of it. I live in a condo so I can't run a noisy generator or anything like that to produce electricity. I have 2 corned beef briskets in my fridge I bought a while back and they are good refrigerated until like March 31st so to make more fridge room, I'm canning those tomorrow. Also, going to pull the beef roast and any other meats from my freezer that lend well to canning and get that done this week also. Fortunately, jars have been fairly easy to come by lately in contrast to past. I know that if you absolutely don't open your fridge or freezer supposedly it can sustain enough cold to keep meat at least partially frozen for 2 to 3 days but…I remember an ice storm (Louisville, Ky) that we had in the 90's that our electricity was out for over a week! Of course, if it's cold enought outside you can put your frozen goods in coolers, buckets, etc and keep them frozen outside but as soon as things begin to thaw, if your electricity isn't back on, you're in trouble!

    Constance, I am beside myself that you are heading up another canning collab. I loved each and every day in Canuary and really miss it. So, not to worry, Constance to the rescue. Also, thanks for answering my question about your hoodie. I have always wondered if we Alabamians are the only people that "suggest" that new residents declare. Thanks for all you do.     Constance, have you thought of maybe mentioning your canning series in March to Tawra of Living on a Dime. She & Jill (her mother) do a lot of things but no canning…. That might be a way of increasing viewers on both sides there.

    I think it’s wise to pressure can your meats/ poultry. I do, I can anything that can be canned. I believe we will loose electricity one day just like CA with their rolling blackouts. Everything i can pressure or water bath, I do.

    That’s exactly why I pressure can. I do not keep any meat or chicken in my freezer. If I want a roast, I’ll buy it. If I want fried chicken, I’ll buy it. Otherwise…it’s all pressure canned. No more meat in my freezer.

    I agree with you about the freezers. We already lost everything in one freezer awhile back. I need to do inventory on mine and can some of the stuff.
    I used to live in Alaska and loved it there. My youngest brother still lives there. Such a beautiful state.

    My hubby grew up eating mostly convenience foods, with little diversity. Over the years it has been a struggle to get him to try anything “new”. He will not eat red meat, fish, or pork only chicken or turkey, not canned, and no frozen vegetables. I love to cook and preserve. I try my best to run a sustainable home. I can in small batches, mostly pints and half pints because I usually wind up eating it myself. I keep telling him he is in for an “awakening” in a sustained grid down situation. So be very grateful if you have a spouse that cooks and/or will eat pretty much anything. Makes all of it less stressful to prepare for the unexpected. Peace

    Completely off topic but I love your mug today. May I ask where it came from?
    I recently took inventory of the freezers and it’s been very helpful knowing what’s out there. The part I’m missing is updating the list when I take stuff out or add to the freezer.

    OMG! This is what I have been thinking about too. I also have 2.5 freezers full of frozen meat and thinking about losing electricity which happens here. I need to take two full days and can what is in at least one freezer. So onward and let the canning begin.

    Alaska is beautiful and I wonder if they’re still doing cruise trips out that way? I haven’t been looking either to see any as I won’t be travelling abroad anytime soon. Waiting on a miracle in Canada~ 🇨🇦🙏🏻

    Ava is a pretty girl! You have a River in your yard! Would it help if you had loads of dirt brought in? I’ve never canned, but want to learn. Just don’t know what I can do about a garden right now. May be able to go to farmers markets. I think I just need to get brave and go for it. See what I can grow and can.
