    Seems like a papadam to me. Many different flours can be used: rice, potato, gram, chickpea, etc. There is a French version using buckwheat flour called a Breton galette. Yes, it is exactly a tortilla, with a bean flour/paste instead of wheat or masa, although legume pastes can certainly be used for tortillas. ALL these are best when the batter is left to stand for a few hours or overnight before cooking. In other parts of world they're made from tapioca, taro, manioc and just about anything starchy that can be readily ground up. I suspect that even things like turnips would be pretty good.

    I tried it just doesn’t work. The downside is burnt and up is soft that I can not turn it. I tried in a steel pan I don’t have non stick. Any advice? Thank you

    Amazing recipe. I have to eat GF and I miss "bread." Some of the gf wraps/tortilla are terrible for my digestion. This is So simple, cheap, healthy, gf, no "gums" or additives, and very versatile. THANK YOU for giving such an easy to follow recipe. I will make this soon.😊
