A great idea for beef tongue. Just a thought, have you ever tried substituting a good beef broth for the water in the recipe ? And maybe adding leek, or celery or fennel to the pot for additional flavor to infuse into the meat ? Those flavor profiles might work really well with the flavors of tacos. Looks awesome just as you made it but I'm always looking to make things even better. Thanks for an old school recipe !
