    40 minutes at 180 C is really not enough – it is not even firm. I am leaving it in the oven for at least 20 more min at a lower temp… i read just now for the first time that the oil is a bit too much. Too bad i did not know that beforehand- i have tried and thrown out so many baked goods already. It’s costing me quite alot – the good successful ones go into my handwritten keto recipebook – hope this one makes it to my book 📖

    Thank you! I even “messed up” and substituted butter for oil, and it still turned out beautifully. I beat the heck out of it because my butter wasn’t as softened as it should have been. I was worried that I had wasted all of those ingredients. LOL. However, when it was finished baking and the toothpick came out clean, I let it sit for about 10 minutes before turning it out onto a plate. It sliced up splendidly, and tasted so good I was able to sit in front of an entire plate of Christmas cookies without fighting the temptation. This cake is that good, and I didn’t even glaze it 🙂 The hostess asked me for the recipe because her husband loved it! I didn’t even take any credit. I’m sending your link to her.

    Pound cake is called such because it traditionally uses a pound each of butter, eggs, flour and sugar. To me, butter is what gives pound cake it's super taste, so I'm curious why you would use coconut oil, if butter is keto?
