That looks so incredible. Putting it on the meal plan for once I have an equivalent to the Instant Pot. I'd got my eye on one – I was going to make it a reward for one of my money milestones but I'm thinking I should buy it sooner since I'm seeing how helpful it would be for all sorts of recipes that would have me eating better. Wonder how the soup would turn out with chicken or beef mince – turkey is difficult enough to find without looking for the mince

Mmmm.. I've always wanted to try making Lasagna soup!
You need to try the Belgioioso brand ricotta cheese because its heavenly -its not grainy like most supermarket ricotta. (sorry, its like 6 or 7 bucks a container too, but its so good!!)

Looks delicious. I may be repeating myself, but I make something similar, it's not soup though. I call it "Almost Lasagna". The elements are the same…….. In a shallow personal size pasta bowl I layer cooked pasta (I use wide wavy noodles), slightly warmed cottage cheese (I pop it in the microwave to take off the chill), steaming hot meat/sauce (you want it that hot so it heats the cottage cheese)and sprinkle with parm (the hot meat sauce melts the parm)………… It tastes exactly like Lasagna but is less costly and takes far less time to prepare………… You could layer these same elements in a casserole dish too for a pot-luck, or for family style; then pop in the oven and heat through……….. We love it. I make a pot of meat sauce and freeze the left over in portions for future quick meals…………… I bulk up my meat sauce with bell peppers, black olives and canned mushrooms b/c my husband has to watch his carb intake and these give a lot of volume without increasing the cab count significantly……….. If you mash the olives between your thumbs, instead of slicing them, they look like meat……… I use kitchen shears and cut the mushrooms right in the can to make smaller pieces..not necessary if you like to see the slices of mushroom in your sauce (same for the olives)…….. My husband only eats 2 ounces of pasta (which is a serving: he used to eat twice that or more) and I eat 1 ounce, but it seems like we are getting a lot of food b/c of the volume of the sauce….Almost Lasagna is so yummy, we look forward to having it often……….. I serve s green salad on the side which always goes good.
