    A stew is a combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients in a stew can include any combination of vegetables and may include meat, especially tougher meats suitable for slow-cooking, such as beef. Poultry, sausages, and seafood are also used.     Ingredients

    1 lbs lamb chopped (bone-in)
    Stock/ Water (to cover meat)
    4 Whole Fresh Tomatoes
    1 Large Onion peeled (Whole/Halved)
    3 Garlic cloves
    1 Ginger piece
    1 Scotch Bonnet Pepper (Any Chili)
    2 whole spring onions
    1 Bay Leaf
    3 Tbsp All-Purpose Seasoning
    1 Red Bell Pepper (opt)
    1 Knorr Chicken Stock Bullion (Any Bullion)
    Salt
    Oil (opt)

    Instructions

    In a 5Qt dutch oven/ deep pot, add your lamb, fill the pot with water/ Stock until meat is covered. Add your veggies, seasoning, and Salt. Bring everything to a boil and boil for 20 minutes on medium to high heat.

    Once the veggies have softened scoop them out with a slotted spoon, and transfer all the veggie chunks to a bowl let them cool before adding to the blender and blending into a smooth sauce. (you can blend the Scotch Bonnet for heat or leave as is – optional)

    Pour the blended veggie sauce back into the stew. Leave the stew for 30 minutes on medium heat until meat is tender. Taste for seasoning and adjust before serving.

    You can serve Lamb stew with semolina/ Pap/ fufu, or rice.
