Some Koreans roast beef with sesame oil before pouring water and sea weed. It is for Maillard reaction and makes soup more tasty.

I am from Dolsan-eup, Yeosu. That's where I live with my family. Long story short, I got adopted and have been in US since I was 8. I haven't had it since I left Korea. i remember having this at my friends Korean church one time( it was because the choir directors wife just had a baby) i’m in no way korean not by race nor culture but surely enough i loved this dish!!! (they didn’t use meat in it, they added sesame seeds in and had pickled radish on the side, it was so good😊)
