I was stationed in SK for a year in the late 80s and we ate this almost nightly when we were out in the field. We were always stationed with Korean soldiers.
The β€œprocessed” foods were generally part of our MREs (meals ready to eat). The Spam, was what I always referred to as the β€œham slab.” πŸ˜‚. Anyway, thanks for sharing this. Brings back memories. We all shared whatever we had from our MRE and then we would share supper in the field in our small units. It’s one of my favorite memories of that time.

I made something similar, a lot of same ingredients for the stew but with curry (and gochujang), lasted for a couple of days and it was really good!
I too have a bottomless pit for a stomach (though with age I do find myself eating less) When I was in Grade 10ish we would go to boston pizza and get the nachos (I would get the nachos) and then a full meal…

That is what I call, as a girl who grew up in a rural community, "catch all soup". The kind of soup you make with whatever you happen to have. Sometimes you come up with a magical combo. ❀

Korean food really is amazing. I'm also trying to eat more food from different places not just pasta that is my favourite thing in the world. But African food is also so good but feels like people don't give it a chance. I have made some Ethiopian food and Ghanaian food that was amazing. There's so much goodness to find in other people's cultures.
