    Thought of you yesterday when I was subbing radishes for potatoes in a meal prep I was doing yesterday. Thought about why you said you peel the radishes so not to turn the soup pink. As I was scrubbing my radishes with my vegetable brush, I noticed the pink layer easily scrubbed off – no peeling required. I would say that I got off about 90%of the pink and was surprised at how easy the process was. Could have scrubbed harder to finish the process but was ready to add them to my pot & what remained didn't turn my stock pink. Just sharing a tip I discovered by accident…

    I LOVE Zuppa Toscana. Was making it before keto with potatoes. Tried it with cauliflower and it just wasnt the same. When I saw this video I was intrigued. I just made it and OMG!! You are right! So good. My kids didnt even know they were radishes. Thank you Kristi!!!

    Had to run out and get the ingredients for this tonight as it is my favourite soup! I used spicy Italian sausage links and squeezed out the insides as the meat- turned out super awesome! My husband is thin and not keto and didn't know it wasn't potato. Thank you for the recipe!

    What is a good sub for the cream? I’m lactose intolerant. Also, what about adding spinach in at the very end? I cannot do leafy greens (too much fiber) other than spinach.

    I have made this before and I used turnips instead of radishes. It really is a hearty dish & very tasty. I have never had the Olive Garden version so I couldn't compare but I really enjoyed the keto version! Today is cold & rainy here in eastern NC (expecting snow!) & it would be a great day for this β™‘
